This course introduces fundamental principles of sanitation and waste management in the food industry with a focus on food safety and environmental protection. Topics include sanitation of facilities, equipment, personnel, water, packaging materials, and pest control, as well as the implementation of Sanitation Standard Operating Procedures (SSOP). The course also covers the classification, characteristics, and treatment of food industry waste, including liquid, solid, gaseous, and hazardous waste, using physical, chemical, and biological approaches. Through case studies, students develop the ability to evaluate regulatory compliance and propose sustainable waste management solutions for food processing industries.
